Black Garlic Extract
Black garlic refers to the product that is made from fresh raw garlic processed through fermentation and aging techniques, followed by drying. After fermentation, garlic transitions from a milky-white color to a dark brown or black color. The nutritional value is also enhanced as proteins are broken down into amino acids and carbohydrates into fructose.
Black garlic contains elevated levels of amino acids and organosulfur compounds, such as S-Allylcysteine (SAC), which is known to help improve health. Black garlic extract exhibits antimicrobial activity against Staphylococcus aureus, Enterohemorrhagic E. coli O157:H7, Pseudomonas aeruginosa, and Candida albicans.
